Auntie Gales Recipes June 9th edition
Fresh Strawberry Pie

“This is the prettiest strawberry pie. Choose berries that are large and of similar shape. Stand them up in a pre-baked pie crust and pour a strawberry gelatin glaze evenly over the top. Chill until set and serve with a bowl of freshly whipped cream.”

2 (8 inch) pie shells baked
2-1/2 quarts fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
1 cup boiling water
1 (3 ounce) package
    strawberry flavored gelatin
 
In a saucepan, mix together the sugar and cornstarch; make sure to blend cornstarch in completely. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature.
Place strawberries in baked pie shells; position berries with points facing up. Pour cooled gel mixture over strawberries.
Refrigerate until set. Serve with whipped cream. if desired.

I love to make this in early spring when the strawberries are the best!
Heat oven to 350º, grease and flour 8x8 inch baking dish




CAKE:
1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup buttermilk OR
   whole milk
1 egg
2 tablespoons melted butter
1-1/2 to 2 cups fresh
   strawberries, sliced
 
In a medium size bowl, whisk together flour, sugar, baking powder and salt. Stir in buttermilk, melted butter and egg, mix by hand until well blended. Pour into prepared pan; spread sliced strawberries and then sprinkle with topping mixture. Bake 40 to 45 minutes until lightly browned. Serve warm.
TOPPING:
1/2 cup flour
4 tablespoons butter
1/4 cup sugar
With a pastry blender, blend together until coarse crumbs. Sprinkle on top of fruit and cake batter.
 
Note: You can use other kinds of fresh berries, raspberries, blackberries, blueberries, etc.

candy bar brownies

Easy brownies to make and one of our family favorites!

1 (18.25 oz) German Chocolate
   cake mix
3/4 cup butter, melted
2/3 cup Eagle brand sweetened
   condensed milk (NOT
   evaporated milk)
1 (11.50 oz) bag Snickers mini
   candy bars
 
Heat oven to 350º - lightly butter 13x9 inch baking dish.
In a large mixing bowl on low speed, combine cake mix, melted butter and condensed milk and beat just until combined. Spread 1/2 of the mixture into the bottom of prepared pan. Bake 10 minutes; remove from oven and then spread chopped candy bars over top of brownie mixture. Drop by spoonful the remaining brownie mixture over top of candy bars; no need to smooth. Bake an additional 20 minutes. Allow cooling and then cut into bars.
Note: You can use other candy bars in this recipe with good results.
