Auntie Gales Recipes May 12th edition
Waldorf Salad

3 golden delicious apples,
   chopped
3 red delicious apples,
   chopped
1 can (20 oz.) pineapple
   chunks or tidbits, drained
   reserve juice
Small amount of chopped
   celery
White grapes, as many as
   you like
Chopped English walnuts
1/2 cup coconut
 
Combine 1 cup pineapple juice, 2/3 cup sugar, 2 Tbsp. cornstarch and dash of salt. Cook over medium heat, stirring constantly until thickened. Set aside to cool. Mix fruit and other ingredients together. Pour cooled dressing over fruit. Refrigerate.

blt dip

1 lb. bacon, fried and
   crumbled
1 cup chopped lettuce
1 cup chopped tomato
1 cup mayonnaise
 
Mix ingredients well, serve with small triangles of toast or crackers.

Unbelievable
chicken salad

4 skinless, boneless chicken
   breasts
1/2 cup cranraisins (dried
   cranberries)
Mayonnaise
1 small package, chopped
   walnuts
1 tall stalk celery, chopped
   small
Salt and pepper to taste
 
Boil chicken breasts until tender; drain and cool completely. Dice chicken into small bits. Stir in cranraisins, walnuts and celery. Mix in enough mayonnaise to make salad spreadable, using 4-5 tablespoons. Salt and pepper lightly. Refrigerate about 1 hour; stir again before serving with butter crackers.

baked cinnamon
raisin french toast

1 loaf cinnamon raisin toast
9 large eggs
2 cups milk
1/2 cup maple or table syrup
1-2 tsp. cinnamon
8 oz. whipped cream cheese
 
Preheat oven to 350ºF. Cube the bread. Combine eggs, milk, syrup and cinnamon in a large bowl and whisk thoroughly. Spray a 13”x9” pan with cooking spray. Spread half of bread in the bottom of pan. Drop teaspoons full of cream cheese over layer of bread as evenly as possible. Spread remaining bread over top, making sure to cover as much of the cream cheese as possible. Pour egg mixture evenly over top. Sprinkle with additional cinnamon to taste. Bake uncovered for 45-50 minutes.
